Split the zuchinnies in half, hollow out the insides and leave them for later.
On heated oil, put onions and garlic, and then carrots and paprika.
Add a bit of water and stir.
Do this until the vegetables soften a bit.
Now add the zuchinni insides to the mix, add a bit of water and stir.
Add spices – salt, pepper, basil and parsley.
Leave it for about 10-15 mins on a light fire.
Now that you have the mix for the filling – start filling the zuchinnies!
Once you fill them with the mix, add some rice (or soy) cooking cream on top.
Preheat your oven on about 180 celsius, and put the zuchinnies inside.
Bake for about 20 minutes or until you see the zuchinnies are baked (they should have a firm crust!).
